Grateful for..... a chance to be creative

With harvest dragging on so slowly, we have spent a lot of this week at home, giving hubby lots of moral support and cooking up delicious batches of whoopie pies, cakes and slices. And instead of busy nights sewing custom Miss Goodie Two Shoes, I have had the chance this week to leisurely create some new designs and sew some pretties for my friends.

Tonight while perusing my fabric stash it occured to me how grateful I am for this chance to relax and recuperate from such an insanely hectic 2011. In sewing I have found my new love, my little niche in life. I get immense joy from crafting and creating for little girls (and big girls alike!). It is with great excitement that I plan the release of Miss Goodie's new collections and new designs.

But for now, I am so very grateful for the chance to sew at whim and for the special little people in my life. To catch my breath and prepare for another incredible year of Miss Goodie Two Shoes.

I hope you too are having a week to be grateful for, I'm playing along with Maxabella Loves. Why don't you pop on over and join in too.

This week I am grateful..... that spring has sprung

Spring has sprung and noone is more excited then me! The first day of spring marks one of the most exciting days of my life, the birth of my little boy Oscar. How can he be three already?

Spring also means our farm is a burst of colour with vibrant signs of life. What better way to celebrate an extra special birthday and the first day of spring then with a frollick and some fun in the gloriuous sun.

Bathtime fun

Where has the time gone? This month my little princess is turning one, and a few days later my little prince will be three.

Three of the most amazing years of my life.

There isn't a moment I don't reflect on how truly blessed I am (and yes, even when I'm up at 2 am, or spending two hours convincing a toddler to go to sleep!).

Testing out my birthday pressie

My gorgeous hubby bought me a 55 - 200mm Nikkor lens for my birthday last week. I absolutely love it! Now I can finally take photos of Oscar, aka pocket rocket, without him being just a blur in the distance!

The night owl

I'm yawning, I have bags under my eyes, I'm onto my second coffee and I should have been in bed hours ago. So why am I still awake?

I'm a night owl.

Despite needing every ounce of sleep I can get at the moment, I just can't seem to get to bed earlier then 11pm. And that's an early night! Before babies, my late nights were simply about not being able to sleep. Now they're about savouring as much 'me' time as I can before a new day dawns.

There is also something incredibly delicious about sitting alone in a house so quiet you can hear the crickets chirping, the fridge whirring and the ringing in your ears. I love being able to blog without interruption, shop for gorgeous new delights, and the past few nights I've been giddy with enjoyment as I sew together my little creations.

Sure I might be a darn sight more tired during the day, but I'm a lot happier. And for me, its the little things that make a whole lot of difference!

I hope you're enjoying some time alone tonight, and if you've already retired to your comfy pillow, sweet dreams xx

Jumping in muddy puddles

One of Oscar's favourite cartoon characters is Peppa Pig. She's a cheeky little pig who loves jumping in muddy puddles with her brother George. She has become quite a phenomenon in our household, and Oscar delights in quoting his favourite lines:

"Eeeeeeek too SCAAA-RY!"

"DIIII-NOSAUR, roooooar!"

On a recent sweltering autumn day, we were delighted by an afternoon sun shower. The rain fell in big fat drops and smelt delightful. It was such a welcome relief to the persistent 30 + degree days we've been having for more then five months.

The first thing Oscar did was pull on his gumboots, and declare "Time to jump in muddy puddles!"

"Oh where's the rain gone?"

Today we enjoyed another day of autumn rain, and this time the cool weather came with it. I have my fingers crossed those 30 degrees are finally behind us.

Morning glory

I have so much to be grateful for this week; not least my beautiful mum, my gorgeous babies, and the time I have spent relaxing and re-energising. When I return home to the comfort of my Mac I will recount all my blessings and tend to my neglected blog, but in the meantime I wanted to share a snippet of my joy. Something that guaranteed a smile every morning this week.

There is finally a chill in the air! It's crisp and fresh, smelling of dewy grass and an early morning sun. Blink and you will miss it, but for those sublime few moments each morning, Oscar and I have been able to dream of winter. And pretend it's nearly upon us.

I hope you've had a delightful week too xx

Wordless Wednesday: sand between the toes

After a big morning shopping for gorgeous fabrics, we decided to take the caged lion down to the beach so he could stretch his claws and get his fur wet.

Is my foot as big as yours yet mama?

Whoops, should have removed the shorts BEFORE we went in!

I hope you've been having a lovely day too xx

I'm playing Wordless Wednesday over at Faith, Hope & a whole lotta love, pop on over and share your special photographic moments too.

Baking crabapple cupcakes

One of Oscar's and my favourite activities is baking cupcakes. Oscar takes such great delight in helping to measure the ingredients and pour them into the mixing bowl. Of course one of his favourite parts is licking the spoon!

When it's baking time, we head straight for one book, the Crabapple Bakery Cupcake Cookbook. In our humble opinion, it's the only cupcake cookbook you need. Every member of my family owns one. The cakes are so light and airy and the frostings are devilishly divine. The only problem is choosing which scrumptious recipe to bake!

Today's recipe was decided for us. With banana prices sky high at the moment we couldn't let this pile of overripe bananas go to waste. So together we whipped up a huge batch of Natalie's banana fudge cupcakes (otherwise known as banana and macadamia cupcakes with chocolate fudge frosting, drooool!).

I challenge you to make these, and stop at eating just one!

banana and macadamia cakes
makes 24 keeps 2 days freeze 2 months
.

3 1/3 cups plain flour
2 tsp bicarbonate of soda
1/2 tsp salt
1 tsp ground cinnamon
1/8 tsp allspice
250g softened unsalted butter
2 cups castor sugar
4 eggs
1 Tbsp vanilla extract
1 cup buttermilk
2 cups mashed over-ripe bananas
3/4 cup macadamias, chopped

Preheat oven to 170 degrees. Line two 12-hole muffin trays with cupcake papers.

Sift together the flour, bicarbonate of soda, salt, cinnamon and allspice.

In a separate bowl, cream the butter for 1 -2 minutes. Add the castor sugar a third at a time, beating for two minutes after each addition. After the last addition, beat until the mixture is light and fluffy and the sugar is almost dissolved.

Add eggs one at a time, beating for one minute after each addition or until mixture is light and fluffy. Add the vanilla extract and beat until combined.

Add a third of the flour mixture to the creamed mixture and beat on low speed until combined. Add half of the buttermilk and half of the mashed banana and beat until combined. Repeat this process. Add the remaining third of the flour mixture and beat until thoroughly combined; do not over-bet as this will toughen the mixture. Add the chopped macadamias and beat until evenly combined.

.
Spoon mixture into cupcake papers, filling each about three quarters full. Bake for 20 minutes or until a fine skewer inserted comes out clean. Remove the cupcakes from the trays immediately and cool on a wire rack for 30 minutes before frosting.
.
NB. I have made these cakes with and without macadamias, and they turn out perfectly without any need to tweak the recipe. You can halve the recipe if you don't want the temptation of 24 cakes! I tend to put half  into our cake tin and the other half in the freezer.

chocolate fudge frosting
makes 4 cups of frosting - enough for 24 cakes
keeps 1 week

8 cups icing sugar
1 cup cocoa
200g softened butter
3/4 cup milk
1 Tbsp vanilla extract
Sift the icing sugar and cocoa into a bowl.

In a separate bowl, cream the butter for 1-2 minutes. Add the milk, vanilla extract and half of the icing sugar mixture, and beat for at least 3 minutes or until the mixture is light and fluffy. Add the remaining icing sugar and beat for a further 3 minutes or until the mixture is light and fluffy and of a spreadable consistency. Add extra milk if the mixture is too dry or extra icing sugar if the mixture is too wet.

You can use the frosting immediately.

NB. It depends how generously you ice your cakes, but I think a half measure of this frosting is ample for 24 cupcakes. And yes, that includes the spoonfuls that end up straight in the mouth!

This recipe comes with the Oscar seal of approval xxx
